Healthy Vegan Brownies

If you’re craving something chocolatey but healthy? Don’t look further, try this Healthy Vegan Brownies.

They are fudgy, truffle-like and you’d never guess they are made with black beans.

Vegan • Gluten-free • Sugar-free

INGREDIENTS:

1 can black/red beans (rinsed, drained)

⅓ cup maple syrup

⅓ cup peanut butter (or almond butter)

½ cup almond milk

1 tsp vanilla extract

1 cup almond flour (I used almond pulp)

½ cup raw cacao powder

1 ½ tsp baking powder

⅓ cup chopped walnuts or pecans.

METHOD:

Preheat oven to 180°C (350°F) and line an 20x20 cm (8x8 inch) pan with parchment paper.

Rinse well and drain your black beans. Blend beans, maple syrup, peanut butter, almond milk & vanilla until smooth.

Add almond flour, cacao & baking powder, and blend again until thick and even.

Stir in chopped walnuts.

Spread evenly in the pan and bake 30-35 min, until the top is dry.

Let the brownies cool in the pan for about 15 minutes before removing them. This step allows them to set properly so they don’t break or crumble.

Then carefully transfer them onto a cooling rack to finish setting.

Chill in the fridge for 10 min (or overnight for ultimate fudginess!) before slicing into squares.

Optional: Sprinkle with crunchy nuts or sea salt for that gourmet finish.

Store in an airtight container for up to 4 days.

I love serving them cold, straight from the fridge (that’s when they’re at their fudgiest! )
