Silken Chocolate Mousse (Vegan)

This chocolate mousse is, without exaggeration, one of the most surprising desserts I’ve ever made. Not only because of how rich, creamy, and deeply satisfying it tastes, but because of what it’s made from. When silken tofu meets melted dark chocolate and a touch of almond butter, it transforms completely. The result is a velvet-smooth chocolate mousse that feels luxurious, decadent, and comforting.
As a nutritionist, I’ve tried many versions of “healthy” chocolate mousse. But few truly delivered both nourishment and pleasure. This one does. It satisfies the senses while supporting your body at the same time. Unlike traditional mousse made with heavy cream, sugar, and eggs, this version is naturally rich in plant protein, contains healthy fats, and delivers powerful antioxidants from dark chocolate.
Silken tofu is the quiet hero here. It provides structure and creaminess without heaviness, while offering high-quality plant protein that supports stable blood sugar, satiety, and sustained energy. Dark chocolate contributes not only its deep flavor, but also polyphenols that support cardiovascular health and help reduce oxidative stress. Almond butter adds richness, balance, and healthy fats that help your body absorb nutrients and stay satisfied longer.
Everything blends into a smooth, glossy cream in less than five minutes. The only challenge is waiting for it to set in the refrigerator and not eating it straight from the blender.
This mousse keeps beautifully in the refrigerator for up to 24 hours.
Ingredients (4 serves)
180 g dark chocolate (70–85%), melted
600 g organic silken tofu, drained
2 tablespoons pure maple syrup (optional)
2 tablespoons smooth almond butter
1 tablespoon vanilla extract
small pinch of sea salt
Method
Melt the dark chocolate gently, stirring until smooth.
Add the silken tofu, melted chocolate, almond butter, and salt to a blender.
Blend until completely smooth, creamy, and glossy.
Transfer into serving glasses.
Refrigerate for at least 2 hours, until set. Best overnight.
Serve chilled. Add berries, cacao powder, or shaved chocolate and enjoy.
Note: If you’ve never tried silken tofu in dessert before, this recipe will change your perception completely. Silken tofu is what creates the smooth, velvety texture. Regular or firm tofu will not work here, they produce a thicker, grainier result and won’t deliver the same luxurious mouthfeel.
