Cucumber & Avocado Summer Salad

Crunchy cucumber, creamy avocado, that zesty lime dressing.

This Cucumber & Avocado Summer Salad is the one I make on repeat all summer.

When it's hot and the last thing you want is to cook, this is what I make. Spicy, crunchy, creamy, so fresh and light. The cucumber cools you down and keeps you hydrated, the avocado gives you those good healthy fats, and the zingy lime dressing pulls it all together. Have it just like this as a side, or add prawns, salmon or feta and it turns into a proper balanced meal. Light, delicious, and exactly what your body wants on a hot summer day.

Ingredients (serves 2–3)

For the salad

  • 6 small cucumbers (or 1 large), thinly sliced

  • 1 ripe avocado, diced

  • 4 spring onions, finely chopped

  • a small bunch of parsley (or mint and dill), chopped

  • feta or cooked prawns, to top (optional)

For the zesty lime dressing

  • 3 tbsp extra virgin olive oil

  • 2 tbsp fresh lime juice

  • 2 tsp wholegrain mustard

  • 1 tsp sun-dried tomato or chilli flakes flakes

  • 1 tbsp furikake (sesame seeds with seaweed)

  • salt, to taste

Method

  1. Slice the cucumbers into thin rounds and tip into a large bowl.

  2. Add the diced avocado.

  3. Add the chopped spring onions and herbs. Add seeds and spices.

  4. Whisk the dressing: olive oil, lime juice, mustard, the tomato-basil flakes and a pinch of salt.

  5. Pour over and toss gently, so the avocado stays in pieces.

  6. Top with feta or prawns if using, and serve straight away.
