Healthy Strawberry Coconut Popsicles

A refreshing homemade ice cream alternative for hot summer days (vegan, dairy-free)

Do I eat ice cream as a nutritionist?

Yes, absolutely.

Especially in summer. And honestly, I love sorbet. These past few days have been incredibly hot here in Belgium, and homemade fruit popsicles are one of my favourite ways to cool down and stay hydrated.

What I don’t recommend though is buying most industrial ice cream.

If you flip the box and read the ingredients list, it’s often full of gums, artificial flavours, cheap oils, stabilisers, and ingredients you can barely pronounce. And when you really think about it… not only are we eating this ourselves, we often give it to our children too.

While homemade ice cream is actually one of the easiest things to make. You don’t even need an ice cream machine. You can simply freeze fruit and blend it, or pour everything into silicone molds and let the freezer do the work. It takes five minutes, tastes amazing, and you know exactly what’s inside.

This recipe is one of my summer staples:
fresh strawberries, coconut water, lime, and chia seeds for extra fiber and omega-3s.

It’s refreshing, naturally sweet, hydrating, and made with real ingredients only.

Once you start making homemade popsicles, it becomes addictive in the best way. You can use almost any fruit you already have at home: bananas, watermelon, pineapple, peaches, berries… even leftovers that are getting too ripe.

It’s also such a fun activity to make with kids.

Ingredients

Makes 6 popsicles

  • 500 g strawberries

  • 250 ml coconut water

  • 1–2 tbsp chia seeds

  • Juice of 1/2 lime or lemon

  • 1 tbsp honey or maple syrup (optional)

For a creamier version:

  • add a few tablespoons of coconut yogurt
    or

  • use full-fat coconut milk instead of coconut water

Instructions

  1. Add strawberries, coconut water, lime juice, and honey to a blender.

  2. Blend until smooth.

  3. Stir in chia seeds and let the mixture sit for 5–10 minutes. You can blend it one more time.

  4. Pour into silicone popsicle molds.

  5. Freeze for at least 5–6 hours or overnight.

To remove easily, run the molds under warm water for a few seconds.

Healthy eating does not have to be complicated.

Sometimes it’s simply replacing ultra-processed foods with homemade versions made from real ingredients. And once your taste buds reconnect with real food, you realize how good simple things can actually taste.
