Hormone-Friendly Spinach Omelette

The 5-minute breakfast that balances your hormones all day (GF)

If there is one meal I make more than any other, this is it.

This spinach omelette is my go-to breakfast — quick, nourishing, and genuinely one of the most hormone-supportive meals you can eat first thing in the morning. I can have it for breakfast, lunch, and dinner, it works every time.

Most of us were never taught that what we eat first sets the tone for our entire day. But it does.

Eating protein rich breakfast first thing supports a smooth, controlled cortisol curve and stabilises blood sugar so it does not spike and crash. But here is the part I love most: protein provides the amino acids your body needs to produce dopamine and serotonin — your mood and focus neurotransmitters — right at the start of your day.

Ingredients (1 serving)

- A large handful of fresh spinach (organic)

- 3 eggs (organic, preferably free-range)

- A small splash of plant-based milk

- 1 garlic clove

- ½ small onion

- 1 tsp dried herbs (oregano and rosemary work beautifully)

- A generous pinch of sea salt and black pepper

- 1 tsp extra virgin olive oil or ghee, for cooking

To finish:

- ½ avocado, sliced

- A small handful of aged goat cheese or pecorino, to melt on top

To serve:

- Fresh salad leaves — rocket, spinach, fresh herbs, sprouts, or a mix of all

Method

1. Blend the egg mixture. Add the spinach, eggs, milk, garlic, onion, dried herbs, salt and pepper to a blender or food processor. Blend until completely smooth. This step is key, it creates a silky omelette and is a brilliant way to get a full serving of greens into your meal.

2. Heat the pan. Warm a small ceramic pan over medium heat and add the olive oil or ghee.

3. Pour the blended mixture into the pan. Allow it to cook slowly over medium-low heat. The omelette should set gently from the edges inward.

4. Scatter the goat cheese or pecorino over the top and allow it to melt for 30–60 seconds covered. The saltiness of aged cheese pairs perfectly with the spinach.

6. Slide onto a plate and serve alongside a fresh salad of rocket, herbs, sprouts, or whatever is in your fridge. A drizzle of olive oil and a squeeze of lemon on the salad finishes it beautifully.

A Few Notes

- aged goat cheese and pecorino are both lower in lactose and easier to digest than regular cow's milk cheese. They also add a wonderful depth of flavour.

- ideally eat this within 60–90 minutes of waking to support your cortisol awakening response. If you train in the morning, this is an excellent post-workout meal too.

- simply skip the cheese, or use a good quality vegan alternative. The omelette is just as nourishing without it.
